Mom's Potato Salad: A Fourth of July Tradition

Secret ingredient:  Onion Soup MixMy Mother-in-Law, Maxine has been whipping up this family tradition for as long as I have know her (over 30 years).  It is my husband’s favorite.  It would not be a family gathering if this pot luck special wasn’t on the table; I expect to see it front and center on July 4th!  This simple recipe has 5 ingredient and is best if made the day before your event.   The secret ingredient is onion soup mix.  Maxine prefers Lipton brand and she uses Miracle Whip (you can substitute mayo, however, it will change the flavor Simple potato salad with 5 ingredience; onion soup mixprofile).

name products, just the facts.  I have tried other brands and it never turns out the same.

Simple potato salad with 5 ingredience; onion soup mix
8 Large Potatoes
12 Eggs (hard boiled)
7-8 Sweet Pickles
1 Packet Onion Soup Mix
1 Cup Miracle Whip (heaping)  *add more if it seems dry.

Scrub potatoes leaving the skins on.  Put them in a large pot cover completely with water.  Bring to a boil and cook until tender, they should slide off a fork.  Drain and cool completely.  Peel and cut into cubes.  Prepare the boiled eggs and allow them to cool as well.  Once the potatoes are cubed, sprinkle the onion soup mix over the potatoes and stir to coat them completely.  Peal eggs.  Then rough chop the eggs and sweet pickles  incorporating them into the mixtures.  Add Miracle Whip and thoroughly mix until everything is evenly coated.  Refrigerate 2-4 hours.  Best if made 24 hrs before serving!  Optional:  Sprinkle Paprika on top to add a touch of color & flavor 🙂  NOTE:  This recipe makes a large pot luck size.  To make a smaller batch reduce the ingredients in half.

  4. I hope you like it! It is different than most potato salads. Super easy. The hardest part is waiting for everything to cool down and then waiting for all the flavors to blend!
